Chewy Salted Matcha Rye Cookies

The absolute most delicious, chewy and complex cookies I have ever made. So easy and quick, you can keep these babies in the freezer for a later date and even make a cookie pie by filling up a skillet with the dough. It tastes so good dipped in some cold just-from-the-fridge milk.

Ingredients
80g butter melted
135g brown sugar
100g caster sugar
Combine
Then add one at a time
1 egg
2 yolks

125g plain flour
65g rye flour (or flour of choice)
2 Tbsp matcha
1/2tsp baking powder
1/2 tsp baking soda
2 tsp pink salt
Mix
125g white choc chunks

 


Method


Combine dry to wet, mix through but without over mixing. Add your choc chunks through the batter
Bake at 190C for 10 mins
Eat once cooled for best texture 💚
