Flour Talk - All Purpose what?
I know I’m not the only one searching for these things as I have constantly been going on forums and trying to figure out what the heck is AP/ All Purpose ? I live in New Zealand and none of our flours are branded this way? Well.. none of the usual in our local supermarkets.
Let me painlessly explain that All Purpose is just Plain Flour here for us Kiwis.
It’s a general use flour that isn’t considered high or low protein, so hence all purpose or just plain since it’s a middle of the line flour. It’s normally a low 11g protein /100g for us here in NZ. Annoyingly, our high grade isn’t actually that high either .. but depending on the brand your higher grade should be higher in protein.
