Carrot Muffins - taste of Autumn

Deliciously light, moist and perfect on its own. I have tried many, MANY carrot cake/muffin recipes and nothing quite compares to this. It literally tastes like Autumn. I live in New Zealand so no we not on that pumpkin buzz cause I’m telling you right now sis, these carrot muffins will not last more than a coupley days!

I get asked this a lot .. so YES. You CAN make this vegan by changing the milk to a nut or oat ‘milk’, coconut cream, non-dairy yogurt or substitute with water
